O Fallon Brewery


The O’Fallon Brewery was founded by Fran and Tony Caradonna, in 2000. In January they ordered their brewing equipment and sold their first keg on May 6, 2000. The Caradonnas did all the brewing and selling for the first two years, brewing only one style (O’Fallon Gold), selling only kegs and delivering only in St. Charles County. Over the next several years they continued to grow their brands and distribution area. In May 2011 they sold the brewery to Jim Gorczyca, but Fran continues to play a part of day to day operations as the Brewery’s General Manager.

Don’t be fooled by mere pumpkin flavor… This is the real McCoy! We use soooo much real pumpkin in our mash that it adds hours to the lauter. But the result is incredible. We season our beer with fresh cinnamon, nutmeg and clove to give this wonderful seasonal beer its uncanny “Pumpkin Pie in a Bottle” taste. This beer continues to be our most popular seasonal offering so we know it won’t last long.

Our new Pretzel beer is a light Golden Ale with soft toasted bready notes and a touch of salt. A mix of malts were used to create the backbone for this beer. Red Wheat and Special Roast create the toasty flavor along with a subtle tanginess from the acidulated malt. The yeast helps to carry the soft tangy flavor and aroma giving way to a crisp and satisfying finish. Just a hint of hops and a pinch of salt combine to balance the malt profile. We dry-hop this American Style India Pale Ale with seven grains and four domestic hop varieties by adding dry whole hops to the finishing tank so the beer rests “on top” of the hops for five extra days!
